SEAFOOD – FISHES
Here some useful information when you buy or eat fish

How can you tell if they are fresh:

Eyes: They must extend and they must be transparent

Smell: It must be light and pleasant

Branchia: They must be wet and intensively red

Fish scale: They have to be smooth and easily removed.

Fish: It has to be tight

BEFORE EATING THEM AT THE TAVERN

Pick out those you want to eat

Avoid eating fried food/fish because it’s really difficult to distinguish the quality of the oil

Ask for seafood that is served warm. You have more possibilities to taste something which is not kept in the fridge.

Order fish that you can distinguish at least visually. Thus, you will know that you pay for what you’ve ordered.

IN ORDER NOT TO PAY …………THE COAL FOR GOLD

You should be able to disinguish:

The fish called sfyrida from stira: Sfyrida has a light gray color and a long shape. Stira has green “patches” on it.

The so-called goatfish from its “cousin: koutsomoura: The goatfish has a curved head, while koutsomoura has a straight and short front. Koutsomoura also has a more intense smell from the goatfish.

The sardine from frissa: Unfortunately, their only difference is a yellow stripe on the sardine’s sides.

The whitebait from the tseroula: Tseroula is wider and has a lighter color.

WHEN YOU BUY

OCTOPUS: The real octopus has fat tentacles and dark gray color. Instead of octopus they might sell you melidona, which has a tasteless and rough skin. Its color is reddish and its tentacles are thin and long.

SQUID: The real squid is reddish and it has small flaps. If you do not notice it you may eat thrapsalo, which is not as good as the squid. The thrapsalo has a gray color, rarely yellow, while its flaps are very big as regards its body.

Lobster-Shrimps-Crawfish: It orange-red color is a sign of freshness, but unfortunately is not always real, since if you put in hot water and vinegar it becomes like that. Thus, the only way to find out if it’s really fresh or alive is to see it before being cooked.

GENERAL RULES ON THE CONSUMPTION OF SEAFOOD

Never choose seafood that does not have a pleasant smell of freshness

Always choose shellfish of which the shell is closed. If you find a small hole on the shell, try to empty its inside on your hand, to find out if it smells bad.

In order to find out if a cockle is alive you should spill some lemon on it.

Avoid any shell you do not its origin.

Avoid shrimps and crawfish that have an intense smell and avoid those that the legs are not well attached to the rest of its bodies.

A Halloween cake is not only the perfect dessert for any Halloween party and a must have for someone with a birthday on or around October 31st, but also makes a great center piece for your food table if you are throwing any type of Halloween party. Here are two simple, yet impressive Halloween cakes that you can try this year.
Pumpkin Cake

No, we are not taking about a pumpkin flavored cake, but a light colored cake that looks like a pumpkin when you’re finished decorating it.

You will need 3 box mixes of white or yellow cake mix along with the additional ingredients like oil and eggs the box calls for. Prepare the batter as directed. Pour it into two bunt pans and bake according to the package directions. Allow the cake to cool completely.

Meanwhile, combine two to three cans of vanilla frosting in a bowl. You can probably make do with two cans, but if you prefer being able to work out any unevenness, or fix fingerprints made in there by little hands (what child can resist tasting frosting?), go with three cans.

Add enough red and yellow food coloring to the frosting mixture to turn it bright orange. Spread some of the frosting only on the flat side one of the cooled bunt cakes. Set the other one on top of it flat side down. You have a pumpkin shape. Use the rest of frosting mixture to frost the entire cake.

Use black icing to draw a carved pumpkin design on the cake. Some triangular shapes for the eyes and nose, as well as a large half moon shape will do the trick.

Spider Cake

Start with a boxed mix of devil’s food cake (or your favorite chocolate cake mix). Prepare the batter and bake it in two round pans according to the package instructions. Let it cool on a rack.

Scoop 2 cans of vanilla frosting into a large bowl and add enough green and yellow food coloring to turn it into a nice spooky green color. Spread a layer of frosting in between the two cake rounds. Use the rest to frost the entire outside of the cake.

Use black icing to draw a spider web on the top of the cake. Start by drawing lines across the top. Imagine the top of the cake is a clock. Draw a line from 12 to 6, then one from 9 to 3. Fill in the spaces with two more lines each. Then start working on the circles starting in the center of the cake and working your way out toward the edges of the cake.

Take a chocolate muffin, cut off the bottom and frost the entire top of it with chocolate frosting. Roll it frosted side down in chocolate sprinkles and place it in the center of the spider web on the cake. Add four pieces of black licorice to each side as legs.

Now all you’ll need is a spooky costume and you will be ready for an impressive Halloween party.

Adding a wine decanter to your wine bar area will add depth and class to wine drinking. Wine decanters not only make red wines taste better, but they offer a very attractive vessel from which to serve wine to your visitors.A decanter is a type of vessel that is used for holding decantation results. Decantation is the process where liquid from another vessel is poured into the decanter in order to separate a small volume of liquid that contains sediment from a larger volume of relatively clear liquid. In the process of decantation, the sediment is left in the original vessel and the clear liquid is transferred to the decanter.

Wine is a type of liquid that often must be decanted in order to remove excess sediment. All red wines, particularly young red wines, benefit from the oxygenation that takes place during the decantation process. An optimal decanting process involves trickling the wine down the walls of a decanter, which imparts fuller flavor while removing the unpleasant edge of the wine.

Most wine decanters are ornate and tall containers that are made to be very attractive vessels from which to serve wine. Wine decanters may come with a stoppered lid. Additionally, some wine decanters come with a built in rod that aids the decanting process.

Most wine decanters have a very upright and tall shape and are made of glass so that the process of decanting may be seen. One of the most popular materials to make glass wine decanters from is lead crystal. It should be noted, however, that lead crystal is no longer recommended for use in decanters, as the lead tends to seep into the liquid contained within the vessel.

Lead crystal is created by adding lead oxide to molten glass. This lead glass is manufactured because it increases the index of refraction over that of normal glass. This means that lead crystal has a much more ’sparkly’ appearance than regular glass.

Though many people still use lead crystal decanters, I long ago gave mine away and have since switched to regular glass decanters, to avoid lead poisoning. If you think about it, most people have the same liquid sitting against the lead crystal for years at a time -plenty of time to absorb more than a healthy amount of lead, in my opinion.

Popular makers of lead crystal decanters are Waterford Crystal, Steuben Crystal, Baccarat Crystal and Steuben Crystal. These manufacturers of fine lead crystal decanters and other items have perfected the art of stunning lead crystal designs. If you opt to go with a traditional lead crystal decanter for your wine or liquor, I’d go with one of the tried and tested lead crystal manufacturers.

When it comes to glasses your choices are endless and so are the makers.  You can choose from modern or vintage glassware, and you can choose from fine makers like Anchor Hocking, Federal, Libbey, Indiana, or Jeannette.  Why not liven up your kitchen with fabulous glassware?Not only are there many popular glass makers there are a host of popular glass styles.  Tumblers, hi balls, wine glass, water glasses, goblets, flutes, Champaign glasses.  The list goes on and on.  So no matter what your serving needs there is definitely a glass style available for you.

But glassware doesn’t end with glasses.  There are serving dishes, bowls of all sizes, and a host of other wonderful pieces that you can add to your kitchen décor.  Glass like Pyrex can go from the oven to the table to the freezer with no hassle.
